Following my recent trip to Finland I want to share with you the recipe for one of their specialties and one of my ever favourite treats.
When I was living there every year around September we would go out in the near forest and pick blueberries. And there is always a forest near you. So - blueberries everywhere. You just have to be quick because everyone else is also out picking them.
I would normally just put them in my morning porridge but one day my dear friend Yangxuan had found this recipe for Finnish blueberry pie and had made one.
O M G! It was so good. Obviously I copied the recipe and had done it many times since then.
It was Alex's first time in Finland and I wanted to give him the full experience - Finnish sausage, blueberry pie, rice pie, walking on the frozen lake, sauna etc. The recipe is very easy to make. Maybe you can try it for your next "treat day".
Here is what you need.
For the base:
1. 150g butter
2. 25dl brown sugar
4. 1/2 spoon baking powder
For the top:
1. 0.5 dl brown sugar
2. 1 egg
3. 200ml sour cream
4. 300g blueberries
1. Mix all the ingredients for the base into a dough and spread it on the bottom and sides of a 25cm diameter tray.
2. Put the blueberries on top.
3. Mix well the rest of the ingredients and pour them on top of the blueberries.
4. Bake at 200 C° for 30 minutes.
And then enjoy it (in moderation) with your favourite hot drinks. 😍
