It's the first time that I experiment with chickpea flour and I must say I liked how it turned out. Chickpea flour just like coconut flour is very rich with fiber and protein making it a perfect option for keto lovers. Don't worry, you won't taste any of the chickpea flavour.
No sugar, no flour, fluffy and super tasty. These muffins are what you need!
This recipe takes about 45 to 50 minutes to make.
🔸100g chickpea flour
🔸️70g wholemeal flour
🔸️1/2 tsp salt
🔸️1 tsp baking soda
🔸️1 tsp cinnamon
🔸️3 heaped tbsp powdered erythritol
🔸️1 tsp vanilla extract
🔸️1/2 tsp apple cider vinegar
🔸️3 medium bananas (blended)
🔸️1 cup chopped strawberries
🔸️1 tbsp coconut oil (optional)
🔸️In separate bowls mix all dry ingredients and all wet ingredients (without the strawberries).
🔸️In a larger bowl combine the two mixtures. Then add the strawberries and mix again.
🔸️Grease a muffin tin with coconut oil and fill 3/4 of the space kfor every muffin.
🔸️Bake until golden (15-20 minutes) on 170°C.
🔸️Take out the oven and let cool.
